USDA’s Food Safety and Inspection Service (FSIS) published Directive 7120.1 on Monday listing an update to approved substances that can be used in meat, poultry, and egg processing.

Approved substances fall under those compliant with the Code of  Federal Regulations as being food additives, deemed generally recognized as safe, and approved via acceptability determinations.  Such substances include sodium hydroxide, peroxyacetic acid (PAA), citrus fiber, and sodium carbonate. The list also covers approved On-Line Reprocessing (OLR) and Off-Line Reprocessing (OFLR) antimicrobial intervention systems.
